carrot rosemary soup?

The other day, for some unknown reason, I bought a big bag of carrots. Now I have to use them. I also have a canker sore next to one of my molars that is making eating a bit painful if I am not careful. I figured, what about carrot soup! I used to work at a place that served a similar soup, and I will give it a go on Wednesday. Here is what I plan to do:

Saute some onion and leek in olive oil. Cut up some carrots and throw those in and saute them as well. Season with fresh cracked pepper and salt. Pour in chicken stock and add fresh rosemary. Let simmer until the carrots are cooked through. Then use an immersion blender and blend until smooth. Then, taste it and maybe I will add some cream or yogurt. I'm going to make some of the four seed snapper crackers tomorrow and if I've made some goat cheese again by then I'll use that as well.

Leeks and Carrots - steamed together - seasonings of your choice. Delicious!

Leeks have to be washed VERY thoroughly or they can harbor lots of sand.

Wonderful that you have gifted yourself with traveling.
