my new whole wheat bread

put 1 T yeast in 1 and 1/8 cup warm water with 1 T honey, let sit for 5 minuets or so. Add 3 cups whole wheat flour, 1 T olive oil, 1t salt, and stir up and then turn out onto a floured board and kneed. Let rise and then I don't punch it down so much as gently push the air out. Then shape into a loaf and put in an 8x4 inch pan and let rise again, then bake at 400 for 30-40 minuets. I take the internal temp and between 180 and 200 is ideal. I also think it's best to kneed as little additional flour in as possible to get a better crumb. Oh, and I also put a little pan of water in the oven, but I can't remember why, I think it's for the crust.
