The lentil loaf was great, I made a mushroom gravy and green beans and it was SO GOOD! I didn't find the coriander so I put in a bit of a Middle Eastern/Mediterranean spice mix I bought downtown and it was a good substitute.
This is the recipe I started with, and I didn't follow it exactly because I had to sub a few ingredients (barley for oats, a multi-grain type rice mix for the brown rice, panko for bread crumbs, etc.) and I think it can be very versatile! I want to try it again with a variety of spices.
