unplanned

I haven't started meal planning, I've only just been thinking about it. Today was a bit off, I found out when I got to work that we were going to stay late tonight, and I hadn't planned anything for dinner, and anyway, my routine was thrown off, and I felt off, and I didn't know what to do about dinner. I looked around the kitchen, and then it dawned on me: quiche! I love things like quiche and stir fry, because so many things can be incorporated. So I found a basic recipe, and added some stuff from the fridge, and that was that. I decided to try it without the crust, because I figured I didn't need to eat an entire pound of butter single-handedly this week. Quiche is also deceptively easy. Here's how I did it:

4 eggs
1 cup milk
1 cup grated cheese
other stuff- I used 1 cup broccoli and 1 cup chopped ham
1/2 t pepper

put the other stuff in a well greased 9 inch pie pan. Beat the eggs, milk and pepper, and then pour over the other stuff. Bake at 375 for 35-45 minuets, until a knife inserted in center comes out clean. Let sit 5-10 minuets before cutting.

POST QUICHE EDITING: I'm going to say no extra salt, because it was pretty salty with the ham and cheese.

I was going to comment on your meal list that quiche is a great meal because it makes nice leftovers for lunches or snacks. We discovered that with our little oven in Japan and it was great. Recently I made a curry quiche with leftover coconut milk and curry seasoning. It was so amazing!
