made a batch of cucumber kimchi! It's a little salty, I should have rinsed the cucumbers longer than I did after the salting, but besides that I am very happy with it! Many of the kids told me it's better to eat this variety fairly quickly, because the longer it ferments, the softer the cucumbers get, and most of them don't like them if they are too soft.
