kimchijeon and new term resolution

it's been 3 months, and we started a new term today, and I've decided to start some new things, too. Well, just one new thing. These 3 months, I have just been trying to get by, to grocery shop, to take the right buses and to learn which subway exits to take. Now I am more settled and I want to eat more Korean food! This afternoon I ate ddeokbokki. (pronounced duck-boe-key) (to be fair, I have had this several times before) It's rice cakes in a spicy red sauce with fish cake and sesame leaves. I like to get it in a small size, like maybe a 6 or 8 ounce cup of it, but you can get a big bowl, I just don't like to eat that much of it.

Tonight I'm going to make kimchijeon, or kimchi pancake. It's like a savory pancake with kimchi mixed into the batter. I have had this, also, and I really really like it. To make combine: 1 cup of chopped kimchi, 3 tbs of kimchi juice, 2 tbs chopped onion, ½ ts salt, ½ ts sugar, ½ cup flour (all purpose flour), 1 egg, and ¼ cup of water and mix it well with a spoon. Heat about 2 T olive oil in a 12 inch frying pan and pour in batter. Spread it out with the back of a spoon or a spatula and cook on medium heat for 2 to 3 minuets, until the bottom is brown and firm, then flip and cook on the other side for about a minuet or until done. It's shared as a snack, but I eat it for dinner.

It's time to come home to USA ... minuet is not minute. ;-)

You've brought smile to my old face.

My daughter is 4th grade teacher in Florida.
