I ran my hard apple cider ideas by my acquaintance, Dave. He brews the beer and is growing the stuff that goes into beer in his garden for the first time. It's exciting. It's so amazing, all the things I don't know, but Dave does. I purchased some champagne yeast, which will yield a high alcohol content, and a dry cider. It is also going to be a flat cider. If I want it to sparkle, I would need to add an additive to it, but for the first try it's going to be simple. Dave and his wife also caught a burgler this week.
