fish sauce

my curry recipe doesn't call for it, but I have a huge bottle and small E made me remember that I should add some. So I did. Now I really remember why. It adds a depth. It adds delicious.

We left it out of a favorite curry recipe once. It totally changed the flavor, and not in a good way.

it's so weird because you don't put hardly any in, and it's so foul, but without it, life just isn't the same.
